Last week we had a morning tea to farewell a colleague going on family leave, and my co-worker Michael brought in the most beautiful passion fruit sponge cake that I absolutely adored. He passed on the recipe and I promptly spent my weekend making it. My first attempt was an abject failure, I made too many mistakes to mention. But I am nothing if not persistent, and so yesterday I made my second attempt, under the careful supervision of my mini me, who read the recipe and managed the stirring. And here it is, the most beautiful sponge cake ever. I'm so happy. I can't wait to get home tonight and make myself a cup of French Earl Grey tea and cut a big slice of cake. Yummy. I'm attaching the recipe for anyone who is interested!!!!
